Ilex paraguariensis, commonly known as yerba maté or green maté, is a plant native to South America belonging to the Aquifoliaceae family. Mainly grown in Argentina, Brazil, Paraguay and Uruguay, green mate is renowned for its stimulating effects, attributed to its caffeine content. As well as its nutraceutical value, this traditional drink offers a unique cultural experience, particularly through the maté ritual, which symbolises hospitality and social ties.
