Story of the Trendy Kasha
In Russia, kasha, with a -c rather than an -s, is a traditional porridge made from toasted buckwheat and milk that looks vaguely like porridge.
More generally, kasha refers to hulled and roasted buckwheat.
When toasted, they release a pleasant smoky flavour.
As kasha is not a member of the grass family, it is gluten-free and therefore particularly easy to digest.
Toasted buckwheat is not a cereal, it belongs to the same family as rhubarb and sorrel : the Polygonaceae.
